The "ribollita" bean and vegetable soup, tripe and beef tagliata thus unveil ancient and bucolic emotions, and the braised rabbit pappardelle bring to mind a calling for the wild, the emblem of a Val d'Elsa that revolves around an untamed domestic environment that smells of crostini, Cinta Senese cured meats, and bacon.
